Outline of Research Activities

The following studies were conducted on food and nutrition education ("Shokuiku") and on health guidance for lifestyle-related diseases using information and communication technologies (ICT). 1. Nutritional education on the importance of a well balanced selection of food and creating a good combination of dishes was performed using the Hyper-Mirror System on the same screen to allow joint education of elementary school children in Thailand and in two different regions in Japan. Moreover, this system allows a comparative study of food preferences among school children in different countries. 2. In the Sakado Project on school-based "Shokuiku", the effectiveness of an internet-based food-mapping tool used to choose snacks and between-meal foods by elementary school children was examined. 3. Changes in nutritional knowledge, attitudes and behavior of school children after using a Flash-based breakfast-selection program from a website using the drag and drop method were confirmed. 4. Development of a health guidance program that integrates medical laboratory tests, dietary habits, physical exercise, and smoking and alcohol habits.
